A. – Are you thinking about saving the top tier of your wedding cake for your first anniversary? You’re in luck! It’s a lot easier to freeze wedding cake for your first anniversary is easy (and if done right, it will taste great too).

To preserve the top tier of your wedding cake, you should:

1. First of all, remove all flowers, ribbons, and any other decorative items from the cake.

2. Place the cake (uncovered) in the refrigerator or freezer to let the icing set somewhat (so it won’t smoosh and stick to the Saran Wrap when wrapped).

3. Once the icing is set, carefully wrap the cake in about 5 – 6 layers of saran. Use the real Saran Wrap, not the store brand version. Carefully smooth out any air bubbles so they don’t get trapped under the plastic wrap. (Air bubbles and freezing are not a good combination)!

Some people say to put the cake in a container or box before wrapping it in Saran and foil. Don’t do this, as you’ll trap lots of air in there and your cake will get dried out.

4. Then wrap it in a few layers of heavy aluminum foil.

5. Now put the completely wrapped cake in an airtight container. This will help protect it from accidentally being smashed from having something heavier placed on top of it while in the freezer.

6. Place in the freezer.

Now, fast forward 1 year.

1. Take the frozen cake out of the freezer a day or two before your anniversary, remove it from the airtight container and immediately unwrap all of the foil and saran. If you wait to unwrap it after it’s thawed, thawed icing will stick to the saran so you’ll end pulling off pieces of the icing too.

2. Place the unwrapped cake on a plate and put in your refrigerator to thaw. Once thawed (will take about a day or two), take out of the refrigerator and place on your kitchen counter and allow it to come to room temperature. If you don’t have room in your fridge, you can also place the frozen unwrapped cake on your kitchen counter to thaw.

3. Pop open a bottle of champagne and Enjoy!
